Vegetable Jambalaya Recipe
This is a great meal to eat some now and put some in the fridge for the next day's lunches.
4 Celery Sticks
1 Capsicum (Salad) Pepper
6-8 Okra/Lady's Fingers 500g Pumpkin, diced
1 Tin Chopped Tomatoes or 4 Tomatoes chopped
1 Tin Kidney beans
1 tsp Paprika
2 tsp Mixed Herbs 2 Tbsp Garlic
2 Tbsp Avocado/Coconut Oil
Chop the onion, celery and pepper. Place the oil in a large pot on the stove. Add the chopped vegetables to fry.
Microwave the pumpkin in water for 6 minutes to cut down on cooking time. Chop the okra.
Once the onion becomes translucent add the rest of the ingredients to the pot.
Warm through. Once pumpkin is soft, serve.
