Vegetable Breyani Recipe

This is quite a mild version of this classic. Feel free to increase the spice to suit your pallette.

Base Ingredients

1 Onion, chopped
1 tsp Tumeric
1 tsp Cinnamon
1 Tin Lentils, drained
1/2 cup Flax seeds
1 Tbsp Avocado/Coconut Oil

Base Method

Saute the onion in the oil. Add the spices, lentils and seeds and warm through.

Stew Ingredients

500g Pumpkin, diced 1 Onion, chopped
3 Carrots, chopped 1 Red/Green Pepper, chopped 2 tsp Garlic
2 tsp Ginger
2 tsp Breyani spice/Curry powder/Paprika
2 tsp Mixed herbs/Coriander
1 Tin Tomatoes (chopped) or 4 Tomatoes, chopped
1 Tbsp Avocado/Coconut Oil

Base Method

Saute the onion, spices and herbs in the oil. Add the pumpkin and tomatoes and cook for 5 minutes.
