Broccoli and Cauliflower Au Gratin Recipe
This recipe makes enough for a side dish. If you want to serve as a main, double the ingredient amounts.
250g Frozen Veg (Broccoli/Cauliflower/Carrot mix used here)
1 Tbsp Flaxseed/linseed meal/flour (substitute soy flour if you prefer)
2 Tbsp Avocado/Coconut Oil
3/4 cup Milk
1/2 cup Cheese
1/2 Tbsp Mixed Herbs
1 Tbsp Garlic
Place vegetables in microwave safe dish with 1 Tbsp oil. Cover and microwave for 4 minutes. Drain any water off the vegetables.
Mix oil, flour, mixed herbs and garlic in a microwave safe dish (a ceramic mug works well :) ) Microwave for 30 seconds (on high). Add milk slowly while stirring.
Microwave for 1 min 30 seconds. Stir every 30 seconds. Sauce will thicken.
Chop the cheese into small pieces (you can grate the cheese if you prefer). Add cheese to the sauce and stir.
Spoon the cheese sauce over the vegetables. Microwave uncovered for 2 minutes.
