Mince and Squash Recipe

Beef and Gem Squash

Delicious family supper recipe. This includes how to cook gemsquash in the microwave. Serves 4.

Ingredients

Ground Beef or Mutton Mince
4 Gem Squash
1 Large Salad Pepper
1 Large Onion
5 Small Salad Onions
1 Baby Cabbage
1 tsp Garlic
1-2 Tbsp Coconut or Avovado Oil
2 Tbsp Mixed herbs
Little Butter to Serve

Method

Pour oil into pot and add beef or mutton. Cook meat for 45 mins. Stir every 10 minutes or so. Chop onion and pepper and add to meat while cooking.

Place gem squash in microwave safe dish in 1/2 inch water and cook for 5 minutes. Slice gem squash in half. Spoon out seeds. Spoon a little water into the center of the gem squashes. Cook for another 7 minutes.

Chop the cabbage and spring onions. Once the gem squash are finished remove them from their dish, pour out most of the water and you can cook the cabbage, garlic and spring onion in the same dish. Cook for 5 minutes. Stir and cook for another 2 minutes.

Arrange gem squash halves on plates to serve. Spoon cooked meat mixture into gem squashes. Serve the rest of the mince and the cabbage mince alongside the gem squashes.

The meat mixture and cabbage are also delicious mixed together.
