Beef and Summer Veg Stew Recipe
This meal is very quick to prepare. And if you make a large quantity you can always freeze half to defrost and eat later in the week.
500g Ground Beef / Beef Mince
6 Baby Marrows
2 Tbsp Avocado or Coconut Oil to cook
Add Oil to large pan or pot. Add mince and cook on medium-high.
Chop the onion and add to the mince.
Stir every 5 minutes.
Chop the marrows and tomatoes.
Once the onion appears translucent, add the other vegetables and leave to simmer for approx. 15 minutes.
