Beef Hash Recipe
Quick and nutritious. I make this meal in two corningware dishes. One to eat that night and one to go in the freezer. I can then defrost it for an easy week night supper. Serves 6-8.
1 Pack Lean Ground Beef or Mutton Mince
1 Head of Cauliflower
250g packet of Frozen Vegetables (Brocoli, Cauliflower, Carrot mix used here)
1 Tbsp Avo or Coconut Oil for cooking
Slices of Cheese to cover dishes (Gouda/Mozarella/Cheddar)
If using frozen vegetables defrost them in the microwave for 3 minutes.Place mince in microwave safe dish and cook for 10 minutes. Chop onion, drizzle with a little oil and microwave for 3 minutes.
Seperate Cauliflower into florets and microwave in water for 6-8 minutes (till softened).
Cook mince in the microwave for 10 minutes.
Mix the cooked mince, onion, vegetables and cauliflower in the microwave safe dish or dishes you will be serving from or freezing.
Cover the mince mixture with a thin layer of cheese and microwave for 4-5 minutes.
