White Fish with Beans and Salsa Recipe
This Hake with cannellini beans and salsa verde makes a delicious and impressive looking supper dish. I used hake but you can also try halibut or snapper as the fish.
4 Frozen Hake Fish Fillets (or any white fish fillets e.g. halibut)
1 Large Onion
1 Tin of Tomatoes
1 Tin Cannellini Beans
4 tsp Garlic
1 Tbsp Chopped/Flaked Almonds
1 Tbsp Mixed Herbs
1-2 Tbsp Coconut or Avocado Oil
Chop 1 large onion and cook in the microwave for 5 mins in 2 Tbsps oil. Add 2tsp garlic and cook for another minute.
Drain the beans. Add the tin of tomatoes and tin of beans to the onion. Mix well and put back in the microwave for 3 minutes.
Cook the fish fillets for approx. 3 mins per fillet. Make sure the flesh has turned white all through as cooking time may vary between microwaves.
For the Salsa Verde: Mix 2tsp garlic, 1 Tbsp chopped/flaked almonds, 1 Tbsp mixed hebs, juice and pulp of haf a lemon and 3 Tbsp olive oil.
Spoon the salsa over the fish and put in the microwave for 30 seconds.
Serve the fillets with vegetables.
