Fish with Tomato Salsa

This is a great fresh tasting summer lunch.

Ingredients

Frozen hake fillets
Tomatoes
Cucumber
Spring Onion
Lemon half to season
2 Tbsp Avocado or Coconut Oil for cooking

Method

Heat the hake fillets in the micro (3 mins for 1, 5 mins for 4 ). Check flesh is white all the way through.

Chop tomatoes, cucumber and onion finely.

Mix chopped veg together with dash of lemon and oil and micro for half a minute.

Pour veg over fish fillets and serve.
