Lemon Meringue Pie

A low carb lemon meringue pie recipe. And you can do it all in the microwave.

Filling Ingredients

20g Gelatine
3 Egg Yolks
1 Tbsp Soy Flour (15ml)
Juice and Rind of 1 Lemon
150ml Hot Water 2 Tbsp Butter (30ml) 2 Tbsp Xylitol (30ml) 1/2 tsp ground Ginger (2.5ml) 1 tsp Vanilla Essence (5ml)

Filling method

Mix all ingredients and microwave for 4-5 minutes. Stir every 1-2 minutes.

Crust Ingredients

150ml Soy Flour
2 Tbsp Butter (30ml) 1 Tbsp Xylitol (15ml) 1 Egg

Crust Method

Mix all ingredients and press into a microwave safe pie dish.
Microwave for 3 minutes.

Topping Ingredients

3 Egg Whites
2 Tbsp Xylitol

Topping Method

Beat the egg whites until soft peaks form. Add the Xylitol and beat until peaks stiffen.

Putting the cake together

Spoon the filling into the crust. Top the filling with the meringue. Microwave the pie for 5 minutes.
