Fruit Cake Recipe
This fruit cake means you can still have festive occasions without sugar. It's also a great cake for including a slice in the family lunchboxes each day.
125g Fruit Cake Mix
1 cup Soy Flour (250ml)
1/2 cup Flaxseed Flour or further Soy Flour(125ml)
1tsp Ground Cinnamon (5ml)
1tsp Ground Ginger (5ml)
1tsp Mixed Spice/Nutmeg/Allspice (5ml)
1tsp Baking Powder (5ml)
1tsp Caramel Essence or Vanilla Essence/Extract (5ml)
3Tbsp Avo/Coconut/Olive Oil (45ml)
2 Eggs, beaten
1/2 cup Fruit Juice
1/2 cup Water
In a micro safe cake tin (Silicone bakeware is good), mix dry ingredients well.
Add wet ingredients and mix.
Microwave for 4 minutes, turn the dish, micro for another 4 minutes, turn dish and micro for another 1-2 minutes.
This cake will last about two weeks if kept in the fridge.
