Fruit Buns

These low carb fruit buns are delicious, and with crosses added they become Hot Cross Buns, perfect for celebrating Easter. Makes a baker's dozen (13 buns).

Ingredients

Buns:
1/2 cup Fruit Cake Mix (125ml)
2 cups Soy Flour (250ml)
1 cup Milk
1/2 cup Avo/Coconut oil (125ml)
1tsp Cinnamon
1tsp Mixed Spice/Allspice/Nutmeg
1 Egg, beaten
2tsp Baking Powder (10ml)

Crosses:
3Tbsp Soy Flour
3Tbsp Water
1tsp Xylitol

Fruit Buns

Method

Preheat oven to 180 degrees Celsius (375 degrees Farhenheit).

Mix all bun ingredients. Line oven tray with baking paper and spoon mixture onto paper. Leave room for buns to rise. Glaze the buns with a little extra milk.

If crosses are required, mix ingredients for crosses into a paste. Then use the back of a teaspoon to or other implement to score a cross in the top of the buns. Spoon the cross mixture into the scored cross.

Bake buns for 20 minutes.

Serve with plenty of butter.
