Low Carb Chocolate Brownies

These brownies are something special. Perfect for including a slice in the family lunchboxes each day.

Ingredients

3/4 cup Greek or Double Cream Yoghurt (175ml)
1/2 cup Cocoa (125ml)
1 cup Soy Flour (250ml)
2 Eggs, beaten
2 Tbsp Xylitol (30ml)
1 tsp Vanilla or Caramel Essence (5ml)
1 tsp Baking Powder (5ml)
1/4 cup Flaked Almonds or other Nuts (60ml)

Method

Preheat oven to 180 degrees Celsius (350F or Gas Mark 4). Beat all ingredients, except nuts, till fluffy. Fold in the nuts.

Lay a sheet of baking paper in a rectangular baking tray. Spoon mixture in a layer into the tray.

Bake at 180 degrees Celsius (350F or Gas Mark 4) for 15 minutes.
